TOP 10 things you will gain
from this incredible experience:
- You will learn all of our time saving
techniques for a wide array of innovative dehydration procedures; from
making taco shells, pizza crusts, crackers, raw spring roll
or tortilla wrappers to preparing burgers & falafel in
large batches.
- Learn how to quickly make 50/100 batch sizes
of macaroons/brownies/cookies and other small desserts.
- Make the best raw pies in the world in
multi-pie batches
- Prepare 12 quart & larger batches of
granolas, candied nuts, etc.
- You will learn efficient ways of making soup
concentrates, dressings and spreads/nut cheeses.
- You will be taught how to inventory and manage
production for efficient Kitchen time management.
- You will learn how to safely and effectively
handle commercial equipment (such as 6 Qt Food Processor and 1 Gallon
Blender) and process vegetables with knives and other tools, in large
quantities for maximum efficiency
- You learn how to easily manage soaking and
germinating an array of nuts, seeds, grains and legumes for rawfood
recipes
- You will see, and get to know through your real
restaurant experience in our rawfood kitchen of 9 years
evolution, the ideal way to set up a commercial raw kitchen!
- With the completion of
this program you will not only possess the skills to work at ANY
other rawfood restaurant AND receive Rawbert's
personal RECOMMENDATION in writing along with
your CERTIFICATION, (Rawbert is known and
respected as a pioneer and owner of one the longest standing and
first gourmet rawfood restaurants in the country - the 4th such
establishment), BUT you will likely be able to improve any
other raw restaurant's kitchen operation from all of the innovative
proprietary secrets you will learn from Rawbert!
IMPORTANT
Notes:
- It is recommended to train 2 consecutive weeks
Tues to Sat, 7/7:30 am to 2/3pm each day. This reinforces your
training and allows you to feel the rhythm of production based on the real
flow of a working restaurant.
- We
can only train 1 or 2 (max.) individuals at a time, THEREFORE reserve
your spot quickly in order to get in cue for your preferred dates
- Not
all applicants will be accepted into this program.
- We
can only accept a little more than a dozen or so candidates a year
and may discontinue this program as our base operation becomes more
financially solvent; THEREFORE reserve your spot NOW while we are
still offering this program!
COST:
$2500, 1/2 as deposit, 1/2 due on commencement of training.
Compare to
over $10000 at raw schools or Juliano's 18 hour program for $3500, (who I
absolutely love by the way, Juliano rocks as the Godfather of raw gourmet)
- that's
roughly only $200/day for 1 on 1 exclusive training, innovative trade
secrets & recipes.

GUARANTEE: I
guarantee you will be satisfied or you will receive the additional training
necessary to get you 100% totally happy and satisfied. (Really, how could
it be any other way)
MEALS: During
their training Professional Chef Candidates
receive 30% off all regular menu items and 15% off bottled beverages and retail
items with a daily credit of $7.00 after the discount is applied to purchases
(this enables you to eat up to $10 retail value of free food and beverage each
day + free Tea). This is of course in addition to the sampling you will do
with our Sous Chef.
VOLUNTEERING: Our
Professional Chef Candidates are also
given an opportunity to volunteer in the upstairs kitchen prior to their start
date to familiarize themselves with the surroundings so they may take even
greater advantage of the overall opportunity commencing their first day of training.
Some
people will want to consider this program just for the purpose of having AMAZING
Home Chef skills
or
to vastly improve their Raw Teaching Ability
and Knowledge Base!

cream shops, catering, retail foods, institutional use, etc, is only just
