RECIPE OF THE MONTH

| Gazpacho
Brought to the United States from the Andalusia region of Spain, gazpacho combines chopped or pureed produce -- tomatoes, cucumbers, onions, peppers, and celery. It can be spicy or mild, seasoned with garlic, olive oil, hot peppers, vinegar, or citrus juice and herbs. Because of all the strong ingredients -- raw garlic and onion, herbs and spices -- a few hours in the refrigerator is recommended to allow the flavors to mellow by serving time. Here is a basic and fairly chunky gazpacho recipe:
Ingredients:
3 cups fresh organic tomatoes chopped
½ cup each: finely chopped organic green peppers, celery, cucumber
½ cup finely chopped organic onion
2 teaspoons organic parsley, snipped
1 teaspoon organic chives, snipped or scallion
1 small clove organic garlic, minced
3 tablespoons tarragon wine vinegar or apple cider vinegar
2 tablespoons organic olive oil
¼ teaspoon celery seed
1 teaspoon salt
¼ teaspoon black pepper
1 or more dried Chili Pepper to taste
3 cups organic tomato or vegetable juice (such as Carrot,Celery/Beet)
Combine all ingredients in a bowl. Cover and chill overnight to marry the flavors of the ingredients. Garnish chopped herbs such as Basil or Cilantro. |
